Kilishi is typically made from beef, lamb, mutton, or chevon that’s seasoned with salt, pepper, and spices. Other ingredients that might be added include garlic powder, cloves powder, ginger powder, seasoning cubes, paprika, groundnut paste, and Magi seasoning.

PreparationKilishi is made by seasoning slabs of meat, smoking them, and then drying them in the sun. In Nigeria, kilishi is often dried using a wood fire until it’s completely dry.
